I do feed beet pulp in the winter; I mostly use it to help with hydration as the horses sometimes don't drink enough when its freezing out (I only feed it soaked). I can only get plain beet pulp pellets, and all my horses eat it soaked just fine.
I have a senior gelding, and the beet pulp in his diet does seem to help him hold his weight, but, that isn't all he gets; he also gets a ration balancer (to be sure he's getting the protein he needs), a grain mix (its a little sweet, so it keeps him eating), senior (he doesn't eat hay as well as he used to, so needs some quality fiber in his diet, and the senior is locally available, so I have plenty on hand) and some grass hay pellets (he loves these, but as they are a special order and expensive, he gets a limited amount - mixed with the senior, it helps to eat the senior). This year, I just started adding a small amount of beet pulp a week or so ago, usually I don't feed it til much later in the fall; and so far, he's eating it right up (he's not a big fan of wet feed, so I have to switch it up for him to keep him eating).
